I love growing tomatoes. Over the last four years,
I’ve grown several different varieties each season so that I can learn how differently they may grow, or look when ready to harvest. That said, I usually end up with a load of tomatoes. In past years I have shared some of my harvest with friends, but we’ve needed to keep social distance this year, so I had many more tomatoes than I initially knew what to do. Lo and behold, I saw a technique online for freezing tomatoes that appeared uncomplicated and I’ve shared it below with you.
Here’s how to freeze tomatoes:
- Wash tomatoes and remove stems and cut the circle around the core and pull it out.
- Score the bottom of the tomato
- Place the tomato in a freezer-safe ziplock bag
- Squeeze the air out of the bag
- Place in the freezer
My “teacher”, Jess from Roots and Refuge Farm said that scoring is the secret. When you are ready to use them, allow them to thaw, and when ready, the tomato will simply slip out of the skin because you’ve already given it a “way out” by scoring.
I will update this blog as soon as I try my hand with thawing and preparing the frozen tomatoes for something tasty over spaghetti.
